Matt K. first started selling Pizza M pizzas at the Urbana Sweetcorn Festival in 2008. This began after a fun summer of pizza & wine research in Europe and 20+ years of experience working in restaurants here in the States. He then returned to Urbana to go back to work at Mirabelle Fine Pasteries (and to start making delicious pizzas for everyone to enjoy).
One thing led to another and Matt started making Pizzas every Friday after the bakery closed for the night. It was only carry out and only open for a few hours a week - but great fun and a definite success with the local pizza customers of Champaign-Urbana.
Special THANKS! to all the people who came in week after week to try out the new pizza special of the night! With the help of the many great regulars and the good people at Crane Alley, Bouvon's, Bunny's, and more, Pizza M turned into a nice addition to Downtown Urbana's community.
After about 5 years of developing recipies and making pizzas at Mirabelle, Matt met with another Matt - Matt Cho. Matt Cho had decided that Urbana was the place to start his new Co-Op / Collective business hub. After he bought the buildings at 206 & 208 W. Main in Urbana, both Matts got together to start remodeling the new space for the new Pizza M restaurant and other spaces for new small businesses. A very helpful and much needed Indigogo fundraising campaign raised about $8,000 dollars to help purchase equipment and get the ball rolling.
They soon met with Josh Lucas and realized that Urbana would also love to have a great place with Handcrafted wonderful coffee as well as Artisinal Pizzas. After plenty of hard work and struggle, Pizza M & Flying Machine Coffee was up and running in September of 2013. They may not have had much furniture or an advertising budget to speak of, but were in business!
